Spicy mango in vinegar
Pickled mango is a spicy side dish made from unripe, green mango pulp that is pickled in a vinegar and oil mixture with a variety of spices such as chili, mustard, fenugreek, turmeric, and salt to preserve it and give it a sharp, sour, and slightly bitter taste that goes well with curries, rice dishes, or as a dip. It differs from sweet chutney in its intense spicy flavor.
Use: Traditionally served as an accompaniment to Indian main courses, rice, bread (naan), or as a dip with papadums.
