Tape Singkong Manis is a popular Indonesian dessert or snack made from fermented cassava (singkong), which gives it a sweet, slightly sour flavor and a soft, tender texture. The sweet taste comes from fermentation, during which rice yeast (ragi) converts the starch in cooked cassava into sugar.
