Preparation:
Boil 150g beef offal (tripe/lung/brisket) and cut into cubes. Set aside. Pour away the stock. Boil 150g beef cubes in 800 ml water. Leave 600 ml beef stock in the pan. Add the Bamboe Soto Betawi and offal to the beef stock and simmer for 5 minutes. Add 3 tbsp/35 ml discke coconut milk or 100 ml milk and bring to the boil.
Serve with melinjo fries, chives/leek, lime juice, fried shallots and diced tomatoes.
