Spice mix for Kalasan roast chicken
Garlic (30.2%), vegetable oil, palm sugar, salt, pepper (8.7%), galanga, lemongrass (6.9%), salam leaves (3.5%), lime leaves (3.2%)
1 lb/500g chicken, cut into parts.
Boil water, add Bamboe spice mix and chicken, simmer until tender and thickened.
Deep fry chicken until golden brown.
Tips: for the flakes (as pictured) add shredded galangal or coconut on step 1.
