Mirin seasoning
Mirin seasoning is a sweet, aromatic Japanese rice wine seasoning that adds sweetness, shine, and umami to dishes; it is made from fermented rice and is a staple ingredient in Japanese cuisine, used for glazing, marinating, in sauces (such as teriyaki), and soups. There are several types, including hon mirin (genuine, with a higher alcohol content), shio mirin (salted), and shin mirin or mirin-style (with very little or no alcohol, used only for seasoning).
